Prepare the Curry

Heat coconut cream in a wok until oil separates. Add green curry paste and fry until fragrant.

Cook the Chicken

  1. Add chicken pieces and stir until coated with curry paste.
  2. Pour in coconut milk and bring to a simmer.
  3. Add Thai eggplant and cook for 10 minutes.

Season and Serve

Season with fish sauce and palm sugar. Add Thai basil and kaffir lime leaves just before serving. Serve with jasmine rice.
