Prepare the Sauce
Mix tamarind paste, fish sauce, palm sugar, and water in a bowl until the sugar dissolves.

Soak the Noodles
Soak rice noodles in warm water for 30 minutes until pliable but still firm. Drain well.

Stir-Fry
- Heat oil in a wok over high heat. Add tofu and cook until golden.
- Push to the side and scramble the eggs.
- Add noodles and sauce, tossing constantly for 2-3 minutes.
- Add bean sprouts and chives, toss briefly.

Serve
Plate and garnish with crushed peanuts, lime wedges, and dried chili flakes.
